If you often cook eggs, you may have noticed that extremely fresh ones are difficult to peel when hard-boiled. The shell doesn't peel back cleanly and often leaves a pock-marked texture on the surface of the egg. But as eggs grow older, their shells peel more easily. Why is this? In fresh eggs, the albumen (egg white) tends to stick to the inner shell membrane due to the less acidic environment of the egg.
After the eggshell's protective coat slowly wears off, the egg becomes porous, absorbs more air, and releases some of its carbon dioxide. This makes the albumen more acidic, causing it to stick to the inner membrane less. The egg white also shrinks slightly, so the air space between the eggshell and the membrane grows larger, resulting in boiled eggs that are easier to peel.
For ideal peeling, use eggs that are seven to 10 days old and follow Jacques Pepin's tips for boiling the perfect egg.

Post a CommentYep, this is why I always hard boil the last few eggs that are in the carton after they've been in the fridge for a week or so. It works SO much better!
thanks, hubby and I have a heck of a time peeling back hard boiled eggs that we get from a local farm and have moved on to poaching them because of this.
Put a generous splash of vinegar in the water when boiling the eggs. It doesn't make the eggs smell or taste differently, but it does make it much easier to peel.
Bring the water to a boil first, then drop in the eggs very gently. I have never had a difficult time peeling the freshest of eggs doing it this way.
This article is not true. I usually keep eggs longer than a lot of folks, and they still don't peel well when hard boiled.
I don't know the reason why, but my eggs are always older than 10 days, and boy do they peel hard, and the egg sticks to the shell inside and comes out looking like the craters of the moon.
here is the way to peel them....leave in pan....put cold water on them and let them cool down.....leave in pan,cover and shake them real good(they all bounce against each other and the pan)....the shells are then in a bunch of little pieces and it falls right off without taking big chunks of the white off. ...believe me because I do it and it works.
Simple tip to easy cooked egg peeling. Take the hard boiled egg whether it is newly boiled or not and wrap it in a paper towel. Slowly and lightly tap the entire egg allowing it to crack the shell in tiny pieces, it will look like a mosaic- Then open the paper towel and start the peeling! It will come apart very easily and almost in one piece. Run the egg under cool water to remove any bits of shell that might be left stuck to the egg.
